Emping is an Indonesian side dish now also touted as a snack in the Netherlands. The thin crispy slices of emping are made from the white, almost-ripe, shelled nutty seeds of the melindjoe tree that measure 3.5 x 1.8 cm. After being roasted, crushed and dried, the product is finally fried in oil for a very short time.
