Petis udang is a black coloured shrimp paste in Indonesia. Shrimp paste is shrimp extract thickened with the addition of several different ingredients to give it an interesting taste, color and consistency. Generally made from shrimp meat or shrimp waste (shrimp head and skin) which is deliberately boiled to extract the juice (extracts containing amino acids, vitamins, minerals and flavor components).
Ingredients: Water (40%), wheat flour (36%), sugar (10%), shrimp (9%), salt (5%)
