Palm sugar is a sugar originally extracted from the sap of the areng palm and the date palm, which leaks from the severed sites of the inflorescences. Today the sugar is also extracted from the sap of the sago palm and the coconut palm (coconut sugar). Palm sugar is a bit less sweet than regular granulated sugar and has a caramel-like aftertaste.
