Lotek is a Sundanese speciality that is easily found throughout West Java. At first glance, lotek is similar to gado-gado, which is a stew of fresh vegetables topped with a dressing of sambal mixed with peanut sauce. The uniqueness of this dish is that tempeh is often added to the sambal and shrimp paste, brown sugar and garlic are added to the dressing. In general, lotek tastes sweeter than pecel or gado-gado.
Lotek can be served with lontong or warm rice, accompanied by crackers and fried onions.
