Dried bean curd sticks ( kembang tahu) are made from the skin which develops on top of vats of simmering soy milk. The skin is skimmed off, rolled into these protein-rich sticks and then dried. The bean curd or tofu sticks – also known as dried bean milk skin rolls, dried tofu skin rolls, yuba, fu zhu or tofu bamboo.
